Nacho Cheese Chowder

1/2 pound lean ground beef
1 green bell pepper, seeded and chopped
1 (10.75-ounce) can condensed cheddar cheese soup
1 1/4 cups milk
1/2 cup loose-pack frozen whole-kernel corn
1 tomato, cored, seeded and chopped
1 tablespoon minced onion

  1. In a heavy, deep skillet over medium-high heat, sauté ground beef and bell pepper until beef is browned, 5 to 7 minutes. Drain. Stir in cheese soup, milk, corn, tomato and onion. Cover and cook for 10 minutes.
  2. Serve with tortilla chips.

Makes 4 servings.
