Velvety smooth soup of sweet nectarines, puréed with sour cream and a buttery white wine, will start any meal in style.

Nectarine Soup

2 cups peeled, pitted and sliced nectarines
1/2 cup sour cream
1/2 cup dry white wine, such as semillon or sauvignon blanc
1/4 cup fresh mint leaves

  1. Combine nectarines, sour cream and red wine in blender and process until smooth. Garnish with mint leaves to serve.
  2. If refrigerated, soup may need to be re-blended prior to serving.

Makes 2 servings.
