Smoked Sausage
Italian Bean Soup
2 teaspoons olive oil
1 pound smoked link sausage, sliced
1 cup onion, chopped
1 (28-ounce) can whole tomatoes
3 1/2 cups water
2 teaspoons chicken base or bouillon granules
1 cup curly pasta
1 (16-ounce) can kidney beans
- In a kettle, heat olive oil over medium
heat. Add sliced link sausage and chopped onion. Saute for 5
minutes, stirring occasionally. Add whole tomatoes, water, and
chicken base. Bring to a boil then add curly pasta and kidney
beans (drained). Reduce the heat to low, cover, and simmer until
the pasta is tender, about 15 minutes.
Makes 8 servings.
