Spicy White Bean Soup

1 onion, chopped
2 tablespoons butter
2 (15.5-ounce) cans white beans, drained and rinsed
2 (15.5-ounce) cans hominy
2 (15.5-ounce) cans whole tomatoes, chopped
4 cups chicken broth
1 teaspoon granulated sugar
1/2 teaspoon ground cumin
1/2 teaspoon red chili pepper
1/4 teaspoon ground cloves
2 tablespoons chopped cilantro

  1. Cook chopped onion in butter in a large kettle until tender.
  2. Add white beans, hominy, chopped whole tomatoes, chicken broth, sugar, cumin, red chili pepper, cloves, and chopped cilantro.
  3. Bring to a boil, reduce the heat, and simmer for 20 minutes.

Makes 8 servings.
