Split Pea Soup

1 pound ham, diced
1 onion, chopped
16 cups water
2 pounds split green peas
3 carrots, chopped
2 celery ribs, chopped

  1. Dice ham, trimming the fat. Place diced ham in a kettle and fry until crisp. Remove the meat and cook chopped onion in the drippings until soft.
  2. Return the diced ham to the kettle and cook for 2 minutes then add water, split green peas, chopped carrots, and chopped celery ribs. Cover, and cook slowly until the peas are soft, about 2 hours.

Makes 12 servings.
