Three Bean Chili

1 1/2 cups chopped onion
2 teaspoons vegetable oil
1 (15-ounce) canwhite soybeans, drained and rinsed
1 (15-ounce) can black soybeans, drained and rinsed
1 (15-ounce) can red beans, drained and rinsed
2 (14.5-ounce) cans diced tomatoes
1 (15-ounce) can tomato sauce
1/2 cup firmly packed brown sugar
1/2 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons ground cumin
2 tablespoons minced garlic
1 tablespoon chili powder
  1. Heat oil in a large pot over medium-high heat. Cook onions until soft, about 5 minutes.
  2. Add all three beans to onions. Stir in remaining ingredients. Bring to a boil, reduce heat to low and simmer for 30 to 45 minutes.

Makes 6 servings.
