Turkey Chili

2 tablespoons vegetable oil
2 pounds ground turkey
1/2 cup chopped onion
2 garlic cloves, crushed
2 tablespoons chili powder
1 tablespoon paprika
2 teaspoons ground cumin
1 teaspoon salt
1/8 teaspoon ground pepper
1 (28-ounce) can whole tomatoes
2 (15-ounce) cans kidney beans
  1. Over medium heat, in a large skillet, heat oil. Add ground turkey and chopped onions. Cook and stir about 4 to 5 minutes, or until the turkey is no longer pink. Stir in crushed garlic cloves, chili powder, paprika, cumin, salt, pepper, and whole tomatoes; cover. Over high heat, bring to a boil, reduce the heat, and simmer for 1 hour. Add kidney beans and cook until heated through.

Makes 8 servings.
