Wisconsin Cheese Soup

No recipe image available.A hearty cheddar cheese and beer soup with garlic, carrots, celery and onion.

Recipe Ingredients:

1/2 cup diced carrots
1/2 cup diced celery
1/2 cup chopped onion
1 clove garlic
1/4 cup butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
Dash of ground black pepper
2 cups chicken stock
2 cups milk
2 cups flat beer
3 cups shredded Wisconsin Cheddar cheese

Cooking Directions:

  1. In large saucepan, cook vegetables in butter until tender.
  2. Stir in flour and seasonings. Gradually add chicken stock. Stir until mixture begins to thicken.
  3. Add milk and beer to mixture.
  4. Gradually stir in cheese. Simmer until ready to serve. If necessary, additional milk may be added to thin soup.

Makes 8 servings.
