Tender slices of veal baked with crisp apples bubble in a creamy sauce spiked with black pepper. This elegant and hearty dish can be readied while you cook noodles and steam fresh greens.

Veal Manzana

1 pound veal, thinly sliced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons vegetable oil
4 apples, cored and sliced
1/2 cup heavy cream
1 cup plain yogurt
  1. Preheat oven to 325°F.
  2. Season veal with salt and pepper. Heat a skillet, add oil and cook veal slices for about 2 minutes on each side. Transfer to a 14 x 10 x 2-inch roasting pan. Top with apples.
  3. Blend cream and yogurt together in the skillet, scraping any veal drippings into mixture. Cook on low for 1 minute; spread mixture over apples.
  4. Cover loosely with aluminum foil; bake 20 to 25 minutes.
  5. Serve hot.

Makes 4 servings.
