Zesty Anchovy Appetizers

No recipe image available.Miniature rye bread slices are topped with a mixture of Swiss cheese, anchovies, flat-leaf parsley, mayo, fresh lemon juice and black pepper and broiled.

Recipe Ingredients:

2 cups shredded Swiss cheese
2 ounces chopped anchovies
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon mayonnaise
1 tablespoon fresh lemon juice
1/8 teaspoon ground black pepper
20 slices miniature rye bread

Cooking Directions:

  1. In a medium bowl combine shredded Swiss cheese, chopped anchovies, chopped parsley, mayonnaise, lemon juice, and pepper; mix well.
  2. Divide over rye bread, spreading evenly.
  3. Broil for 2 minutes, or until hot. Place on a serving dish.

Makes 20 servings.
