Beef and Fast Mushroom Fajitas
Fix these fajitas when you're short on time but you still want some great food. Strips of sliced beef, fresh mushrooms and onions sizzle with flavor.
1 tablespoon olive oil
1 pound lean beef, cut into thin strips
2 teaspoons chili powder
1 teaspoon crushed dried oregano
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 onion, cut into thin strips
1/2 pound thinly sliced white mushrooms
2 green onions, chopped
1/2 lime, juiced
3/4 cup ORTEGA Salsa - Thick & Chunky (Medium)
1 avocado, peeled, pitted and sliced
8 corn tortillas
- Heat oil over medium-high heat in large skillet. Add beef strips; brown on all sides, about 3 minutes. Add chili powder, oregano, salt and pepper to taste. Add onion and mushrooms and cook until soft, about 4 more minutes. Add green onion and lime juice. Mix well.
- Serve with salsa, avocado slices and warm corn tortillas.
