Power Punch Smoothie

Power Punch SmoothieThis fresh fruit and sweet potato smoothie is packed with flavor and nutrition.

Recipe Ingredients:

1 medium sweet potato
1 banana
1 cup crushed ice
1 1/2 cups orange juice
2 tablespoons honey
1 cup plain yogurt
1/2 teaspoon ground cinnamon

Cooking Directions:

  1. Cook sweet potato in boiling water until tender. Cool, peel and mash until you have 1 cup purée.
  2. In a blender, purée all the ingredients until smooth and frothy. Serve cold.

Makes 2 servings.

Tip: For a faster smoothie, skip the cooking and use canned sweet potatoes.
