Rompope (Mexican Eggnog)
Rompope is strong, sweet and meant to be sipped, so small glasses are in order. Refrigerated, it will keep indefinitely. Recipe courtesy of Shayne and Lee Fischer.
Recipe Ingredients:
4 fresh large eggs
1 (14-ounce) can Nestle La Lachera Condensed Milk (sweetened condensed milk)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup rum
Ground nutmeg for sprinkling
Cooking Directions:
- Blend all ingredients (except for nutmeg) in a blender on high speed.
- Serve in small glasses with a sprinkle of nutmeg on top.
Makes 3 to 4 servings.
