Two Melon Shake

Recipe Ingredients:

3 cups roughly chopped seedless watermelon
1/2 cup cubed raw bitter melon (seeds and fibrous core removed)
1/2 cup coconut milk
4 ice cubes
Pinch of salt

Cooking Directions:

  1. In a blender, on high speed, purée watermelon, bitter melon, coconut milk, ice cubes and salt until smooth. Pour into two glasses and serve immediately.

Makes 2 servings.

Tip: If you can't find bitter melon, substitute it with an equal amount of chopped cucumber. To sweeten, add a drizzle of honey.
