1/4 cup butter or margarine
1 cup granulated sugar
1 large egg
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
2 cups all-purpose flour
1 1/4 cups applesauce
1/2 cup peeled and diced apples or raisins (optional)
- Preheat oven to 350°F (175°C). Line muffin tin with paper baking cups or grease tin with butter or cooking spray.
- Cream butter and sugar with an electric mixer. Add egg, mixing well. Blend in remaining ingredients.
- Fill muffin tins 2/3 full and bake for 15 to 18 minutes.
Makes 18 muffins.
