Bartlett Pear Muffins

Recipe Ingredients:

2 cups all-purpose flour
1/2 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 large egg, beaten
1/4 cup butter, melted, cooled
Zest of one lemon
1 cup diced Bartlett pears (about 2 pears)
1/2 cup walnuts or pecans, chopped

Cooking Directions:

  1. Preheat oven to 425°F (220°C).
  2. Sift together flour, sugar, baking powder and salt.
  3. Beat together milk, beaten egg, butter and lemon zest.
  4. Mix pears and nuts into flour mixture. Gently stir milk mixture into dry ingredients. Batter should be lumpy, not smooth. Do not over mix.
  5. Spray muffin pans with nonstick spray. Fill muffin cups 2/3 full.
  6. Bake at 425°F (220°C) for 20 to 25 minutes until tops are browned.
  7. Remove from pan immediately, and serve warm.

Makes 12 muffins.

Tip: Bake in mini muffin pans at 425°F (220°C) for 15 minutes.
