Blueberry Muffins - High Altitude Recipe
A high-altitude recipe for delicious blueberry muffins for breakfast or brunch.
Recipe Ingredients:
1 large egg
1/4 cup granulated sugar
3 tablespoons vegetable oil
1 1/4 cups milk
2 1/4 cups all-purpose flour
5 teaspoons baking powder
1/2 teaspoon salt
3/4 cup blueberries
Cooking Directions:
- In a medium bowl, beat egg. Add sugar, oil, and milk; mix well and set aside.
- In large bowl, sift together flour, baking powder, and salt. Make a well in the center of the flour mixture and add the egg mixture, stirring just to moisten. Fold in blueberries. Spoon into a greased muffin tins and let stand for 10 minutes.
- Bake in a preheated 400°F (205°C) oven for 25 to 30 minutes, or until done. Cool on wire rack.
Makes 12 muffins.
