Bran Banana Muffins
These hearty, good-for-you oat bran banana muffins with raisins are perfect for breakfast or snack-time.
3/4 cup bran
1/2 cup oat bran
3/4 cup buttermilk
1/3 cup canola oil
3 ripe mashed bananas (about 1 cup)
4 large egg whites
1/2 cup raisins
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
- In large bowl, mix together bran, oat bran and buttermilk. Add oil, bananas, egg whites, and raisins.
- Sift together flour, baking powder, baking soda, and salt and add to batter. Carefully stir just until flour mixture is incorporated. Batter will be lumpy.
- Fill 18 paper lined muffin cups about 2/3 full.
- Bake in a preheated 400°F (205°C) oven for 20 to 25 minutes.
Makes 18 muffins.
