Corn Muffins

Corn MuffinsCorn muffins with a kiss of honey, enjoy them warm with a bowl of hot soup or chili.

Recipe Ingredients:

2/3 cup milk
1/3 cup butter or margarine, melted
1/2 cup honey
2 large eggs
1 1/2 cups whole wheat flour
2/3 cup cornmeal
2 1/2 teaspoons baking powder
1/4 teaspoon salt

Cooking Directions:

  1. In small bowl, beat together milk, butter, honey and eggs. Set aside.
  2. In large bowl, stir together dry ingredients. Add honey mixture. Stir just enough to barely moisten flour. Do not over-mix.
  3. Spoon batter into paper-lined or greased muffin pan cups.
  4. Bake in preheated oven at 350°F (175°C) for 20 to 25 minutes.
  5. Serve warm.

Makes 9 muffins.

Tip: For variation, pare, core and dice one large pear or apple. Add to flour mixture.

Note: Honey should not be fed to infants under one year of age. Honey is a safe and wholesome food for children and adults.
