Corn Muffins
Corn muffins with a kiss of honey, enjoy them warm with a bowl of hot soup or chili.
Recipe Ingredients:
2/3 cup milk
1/3 cup butter or margarine, melted
1/2 cup honey
2 large eggs
1 1/2 cups whole wheat flour
2/3 cup cornmeal
2 1/2 teaspoons baking powder
1/4 teaspoon salt
Cooking Directions:
- In small bowl, beat together milk, butter, honey and eggs. Set aside.
- In large bowl, stir together dry ingredients. Add honey mixture. Stir just enough to barely moisten flour. Do not over-mix.
- Spoon batter into paper-lined or greased muffin pan cups.
- Bake in preheated oven at 350°F (175°C) for 20 to 25 minutes.
- Serve warm.
Makes 9 muffins.
Tip: For variation, pare, core and dice one large pear or apple. Add to flour mixture.
Note: Honey should not be fed to infants under one year of age. Honey is a safe and wholesome food for children and adults.
