Mayonnaise Muffins

No recipe image available.Mayonnaise is used as a 'shortcut ingredient' in this recipe, it replaces both the egg and oil normally used for making muffins.

Recipe Ingredients:

1 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons mayonnaise
1/2 cup milk

Cooking Directions:

  1. In a bowl, combine flour, baking powder, mayonnaise, and milk; stirring until smooth.
  2. Spoon the batter into a greased muffin tin, filling two-thirds full.
  3. Bake in a preheated oven at 425°F (220°C) for 10 to 12 minutes.

Makes 6 muffins.
