Spinach-Topped French Bread
Here's a terrific way to get the kids to eat their spinach disguised as "pesto pizza" bread! This tasty and versatile bread is great served as an accompaniment with a meal, as the main dish itself, or as an appetizer served in bite-sized chunks on wooden picks and accompanied with a marinara or Alfredo sauce for dipping.
Recipe Ingredients:
1/2 cup butter
2 tablespoons finely minced onion
2 garlic cloves, finely minced
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 teaspoon kosher or sea salt
1/4 teaspoon freshly ground pepper to taste
1 (16-ounce) loaf French bread, unsliced
1/2 cup freshly grated Parmesan cheese
Cooking Directions:
- Melt butter in small skillet or saucepan; add onion and garlic and sauté until tender. Remove from heat and stir in spinach, cheddar and mozzarella cheeses, salt and pepper, mixing well.
- Slice the bread in half horizontally and place on an ungreased baking sheet.
- Divide and spread spinach mixture evenly onto cut sides of both halves of bread; sprinkle with Parmesan cheese.
- Bake in a preheated oven at 350°F (175°C) for 15 to 20 minutes or until lightly browned and the cheese is melted.
Makes 16 to 18 servings.
