Strawberry Jam Muffins

No recipe image available.Enjoy these easy muffins, with flavorful strawberry jam centers, at breakfast or brunch.

Recipe Ingredients:

2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
1 teaspoon salt
1 large egg
1 cup milk
1/2 cup vegetable oil
Strawberry jam (or other flavors)
Sugar for sprinkling (optional)

Cooking Directions:

  1. Sift together flour, baking powder, sugar, and salt into a bowl. Set aside.
  2. In a small bowl, combine together egg, milk and oil. Add egg mixture at once to dry ingredients. Stirring mixture only until the dry ingredients are moistened.
  3. Spoon into cupcake wrapper-lined or greased muffin tins, filling each cup one-third full. Drop 1/2 to 1 teaspoon strawberry jam into the center; covering with batter to 2/3 full. Lightly sprinkle tops with sugar, if desired.
  4. Bake in a preheated 375°F (190°C) oven for 15 to 20 minutes, or until golden brown. Remove from oven. Let cool on wire racks.

Makes 12 muffins.
