Apple Berry Breakfast Crisp
Eating a variety of grains and fruits not only ensures that you get more nutrients, but also helps make breakfast more interesting.
Recipe Ingredients:
Filling:
1/4 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
4 cups thinly sliced peeled apples (about 4 medium)
2 cups fresh or frozen blueberries or sliced strawberries
1/4 cup frozen orange juice concentrate, thawed
Topping:
1 cup Quaker® Oats (quick or old fashioned, uncooked)
1/2 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1/3 cup (5 tablespoons plus 1 teaspoon) butter or margarine, melted
Vanilla yogurt for accompaniment (optional)
Cooking Directions:
- Preheat oven to 350°F (175°C). Spray 8-inch square glass baking dish with non-stick cooking spray.
- For Filling: Combine brown sugar, flour and cinnamon in a large bowl, add remaining ingredients and stir until fruit is evenly coated. Spoon fruit into baking dish.
- For Topping: Combine oats, brown sugar and flour in a medium bowl, add the butter and mix until crumbly.
- Sprinkle crumb mixture evenly over fruit.
- Bake for 30 to 35 minutes or until apples are tender.
- Serve warm with yogurt, if desired.
