Apple Berry Breakfast Crisp

Apple Berry Breakfast CrispEating a variety of grains and fruits not only ensures that you get more nutrients, but also helps make breakfast more interesting.

Recipe Ingredients:

Filling:
1/4 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
4 cups thinly sliced peeled apples (about 4 medium)
2 cups fresh or frozen blueberries or sliced strawberries
1/4 cup frozen orange juice concentrate, thawed

Topping:
1 cup Quaker® Oats (quick or old fashioned, uncooked)
1/2 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1/3 cup (5 tablespoons plus 1 teaspoon) butter or margarine, melted

Vanilla yogurt for accompaniment (optional)

Cooking Directions:

  1. Preheat oven to 350°F (175°C). Spray 8-inch square glass baking dish with non-stick cooking spray.
  2. For Filling: Combine brown sugar, flour and cinnamon in a large bowl, add remaining ingredients and stir until fruit is evenly coated. Spoon fruit into baking dish.
  3. For Topping: Combine oats, brown sugar and flour in a medium bowl, add the butter and mix until crumbly.
  4. Sprinkle crumb mixture evenly over fruit.
  5. Bake for 30 to 35 minutes or until apples are tender.
  6. Serve warm with yogurt, if desired.
