Apple Cinnamon Oatmeal

Apple Cinnamon OatmealBored of plain oatmeal? Try a bowl of cinnamon-scented oats with chopped apple cooked in apple juice.

Recipe Ingredients:

3 cups apple juice
1 teaspoon ground cinnamon
1/4 teaspoon kosher or sea salt
1 1/2 cups old fashioned oats
1 apple, peeled and finely chopped

Granulated or brown sugar, honey or other sweeteners (optional)
Milk or light cream (optional)

Cooking Directions:

  1. In medium saucepan, bring juice, cinnamon and salt to a boil; stir in oats and apple.
  2. Return to a boil; reduce heat to medium-low. Cook, uncovered, for 5 minutes until most of juice is absorbed, stirring occasionally.
  3. Cover and let stand for 5 minutes or until desired consistency.
  4. Serve sweetened as desired with milk or cream.

Makes 6 servings.
