Classic Belgian Waffles
Serve Belgian waffles topped with fresh fruit and billowy clouds of sweetened whipped cream, or try them spread with peanut butter and drizzled with maple syrup.
Recipe Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
Salt
2 large eggs
1 cup milk
1 cup buttermilk
1/4 cup light olive oil
Optional Toppings: Maple syrup, toasted nuts, fresh berries, whipped cream
Cooking Directions:
- Preheat waffle iron.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
- In a small bowl, whisk together eggs, milk, buttermilk, and light olive oil. Pour over flour mixture and stir together. Do not over-mix.
- For each waffle, brush waffle iron with light olive oil. Pour in about 1/2 cup of batter and spread to edges with knife. Cook for 30 seconds with lid open. Close lid and cook for about 4 minutes or until golden brown.
- Serve with toppings, as desired.
Makes 12 servings.
