Country Sausage Pie
A great-tasting, quick and easy breakfast pie. The crust is made with a biscuit baking mix.
1 pound sausage, casings removed
1 onion, peeled and chopped
1 green pepper, seeded and chopped
1 cup shredded cheddar cheese
1/2 cup all-purpose baking mix
2 large eggs
- Preheat oven to 400°F (205°C). Grease a 9-inch pie plate.
- In a large skillet, cook sausage, onion and green pepper, breaking up sausage, until sausage is brown. Drain thoroughly. Spread in pie pan and sprinkle with cheese.
- Stir together baking mix and eggs with a fork until blended. Pour over cheese.
- Bake 25 minutes or until knife inserted in center comes out clean.
Makes 6 servings.
