Easy Rice Pancakes

No recipe image available.Easily fortify and add texture to pancake mix pancakes by adding cooked rice. A great use for leftover rice.

Recipe Ingredients:

2 cups complete pancake mix
1 1/2 cups water
1 1/2 cups cooked brown or white rice
Syrup and butter for accompaniment (optional)

Cooking Directions:

  1. Beat pancake mix with water in large bowl only until smooth. Stir in rice.
  2. Pour batter onto hot greased griddle, using about 1/4 cup for each pancake. Cook until bubbles form on top and underside is nicely browned. Turn and brown other side. Turn ONLY once.
  3. Serve with butter and syrup, if desired.

Makes 12 (4-inch) pancakes.
