Monte Cristo French Toast
French toast at its finest. Sprinkled with powdered sugar and/or drizzled with maple syrup, a fine breakfast, indeed.
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 large eggs, well beaten
8 slices raisin bread
Powdered sugar for sprinkling
Maple syrup for accompaniment
- In bowl combine flour, baking powder and salt. Stir in milk and eggs; beat well.
- Cut each bread slice in thirds.
- Dip strips if bread in batter and fry in 1/2-inch of oil in a large skillet, until golden on both sides. Remove, drain and place in a shallow pan in a heated oven until all are cooked. Serve hot, sprinkled with powdered sugar and drizzled with maple syrup, as desired.
Makes 6 servings.
