Quick Eggs Benedict

Quick Eggs BenedictTeam this quick and easy variation of eggs benedict with slices of fresh fruit and steaming mugs of hot coffee.

Recipe Ingredients:

1 (10-ounce) package frozen Welsh rarebit, prepared according to package directions
2 English muffins, split and toasted
4 (1/4-inch thick) slices of cooked ham
4 large eggs, poached

Cooking Directions:

  1. Top each muffin half with 1 slice ham and 1 poached egg; top with Welsh Rarebit.

Makes 4 servings.
