Spicy Vegetable Shakshouka with Cheese

Spicy Vegetable Shakshouka with CheeseRecipe courtesy of the Israel Dairy Board.

Recipe Ingredients:

1 large onion, sliced
5 bell peppers (green, red or yellow), seeded and cut into small cubes
2 large ripe tomatoes, cut into small cubes
Handful of fresh dill, chopped
Handful of flat-leaf parsley, chopped
1 hot chile pepper, seeded and chopped (optional)
4 tablespoons vegetable oil
Salt, ground black pepper and bit of sweet paprika
4 large eggs, beaten
8 ounces feta cheese

Cooking Directions:

  1. Steam the vegetables and herbs with the oil for 20 minutes in a frying pan. Season generously with salt, pepper and paprika.
  2. Crush feta cheese into small pieces.
  3. Mix the eggs and the cheese and pour over vegetables in the pan. Do not stir.
  4. Cover pan and cook for an additional 10 minutes or until the eggs are ready.
