Spicy Vegetable Shakshouka with Cheese

1 large onion, sliced
5 bell peppers (green, red or yellow), seeded and cut into small cubes
2 large ripe tomatoes, cut into small cubes
Handful of fresh dill, chopped
Handful of flat-leaf parsley, chopped
1 hot chile pepper, seeded and chopped (optional)
4 tablespoons vegetable oil
Salt, ground black pepper and bit of sweet paprika
4 large eggs, beaten
8 ounces feta cheese
- Steam the vegetables and herbs with the oil for 20 minutes in a frying pan. Season generously with salt, pepper and paprika.
- Crush feta cheese into small pieces.
- Mix the eggs and the cheese and pour over vegetables in the pan. Do not stir.
- Cover pan and cook for an additional 10 minutes or until the eggs are ready.
