Honey Apple Cake 2

Honey Apple CakeA deliciously moist, honey-sweetened apple cake topped with a honey lemon glaze.

Recipe Ingredients:

3/4 cup honey
1/2 cup butter or margarine
1/2 cup dark brown sugar
1/2 cup strong coffee
2 large eggs
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 cups finely chopped apples

Honey-Lemon Glaze:
1/2 cup honey
2 teaspoons grated lemon peel
1/2 teaspoon ground cinnamon

Cooking Directions:

  1. For Cake: Preheat oven to 325°F (160°C). Grease an 8-inch fluted baking pan*; set aside.
  2. Combine honey, butter, sugar, coffee and eggs; beat thoroughly.
  3. Combine flour, baking soda, cinnamon, nutmeg, salt and ginger. Add to honey mixture; beat until thoroughly blended. Stir in apples. Pour into prepared baking pan.
  4. Bake for 50 to 60 minutes, or until wooden pick inserted near center comes out clean. Cool in pan 10 minutes. Invert on serving plate. Brush with warm Honey-Lemon Glaze.
  5. Honey-Lemon Glaze: In small saucepan combine honey, grated lemon peel and ground cinnamon; heat until consistency is thin enough to brush over warm cake.

Makes 10 to 12 servings.

*A greased 13x9x2-inch baking pan can be substituted.
