Ricotta Cake
A yellow cake mix puts the ease in preparing this simple ricotta cake that has swirls of cheesecake baked into the cake.
Recipe Ingredients:
1 (18.25-ounce) package yellow cake mix.
2 (16-ounce) containers ricotta cheese
4 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
Cooking Directions:
- Preheat oven to 325°F (160°C). Grease and flour a 13x9x2-inch baking pan.
- Prepare cake mix according to package directions. Pour into prepared baking pan. Set aside.
- Combine ricotta cheese, eggs, sugar and vanilla until well blended. Spoon evenly over the cake batter.
- Bake for about 1 hour 15 minutes or until wooden pick inserted in center comes out clean. Cool thoroughly on wire rack. Sprinkle with powdered sugar. Store in refrigerator.
Makes 12 to 16 servings.
