Chicken and Potato Taco Pie
This is comfort food with a South-of-the-Border twist. Serve with sliced cantaloupe sprinkled with fresh lime juice.
2 cups prepared mashed potatoes
1 (1.25-ounce) package ORTEGA Taco Seasoning Mix - divided use
1 tablespoon vegetable oil
1 pound ground chicken or turkey
1/2 cup chopped onion
1 small red bell pepper, seeded and chopped
1 (16-ounce) can ORTEGA Refried Beans
1/2 cup ORTEGA Salsa - Homestyle Recipe (Mild)
1/4 cup water
- Preheat oven to 350°F (175°C). Lightly grease 13x9x2-inch ovenproof baking dish.
- Combine potatoes and 2 tablespoons seasoning mix in medium bowl; spoon into prepared pie plate to form crust. Heat oil in medium skillet; add chicken, onion and bell pepper. Cook until chicken is cooked through and no longer pink. Stir in beans, salsa, water and remaining seasoning mix; cook until heated through. Pour into potato crust.
- Bake for 30 minutes; top with lettuce, cheese and olives, if desired.
