Chicken Skewers in Grapefruit Marinade

1/3 cup pink grapefruit juice squeezed and grapefruit pulp
2 tablespoons soy sauce
4 cloves of garlic, crushed
6 boneless, skinless chicken breasts; cut in 1 1/2-inch cubes
Olive oil for frying
- In a bowl, mix grapefruit juice, soy sauce, pulp and crushed garlic. Soak chicken in marinade for a few hours.
- Put about 3 pieces of chicken on each skewer.
- In a heated fry pan, add olive oil and fry chicken until thoroughly cooked.
