Frozen Yogurt Cookie Sandwiches
Surprise your family with these yummy cookie sandwiches filled with creamy frozen yogurt, and watch for big grins to suddenly appear!
Recipe Ingredients:
3/4 cup butter
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
3 cups sweetened granola
1 cup raisins
Frozen yogurt
Cooking Directions:
- Beat butter and sugar until light and fluffy. Blend in egg and vanilla. Combine flour, cinnamon, baking soda and salt. Add to butter mixture, mixing well. Stir in granola and raisins until well-combined.
- For each cookie, drop two rounded tablespoonfuls of dough onto a lightly greased cookie sheet; flatten to 2 1/2-inches.
- Bake in a preheated oven at 350°F (175°C) for 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheet. Cool completely.
- For each sandwich, place one large scoop frozen yogurt on the bottom of one cookie. Top with second cookie; press gently. Wrap in foil; freeze.
Makes 9 cookie sandwiches.
