Fruit & Berry Compote
This fruit compote makes a perfect light dessert after a heavy meal.
Recipe Ingredients:
1/2 cup Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice
1 tablespoon honey
2 teaspoons finely chopped crystallized ginger
2 teaspoons fresh lemon juice
2 cups cantaloupe balls or cubes
1/2 cup sliced strawberries
1/2 cup blueberries
1 sprig fresh mint, chopped
Cooking Directions:
- Combine Juicy Juice, honey, ginger and lemon juice in small saucepan. Cook over medium-high heat until boiling. Boil for 2 minutes to slightly reduce mixture. Remove from heat; cool completely. (Can place in freezer for a few minutes to speed up cooling.)
- Combine cantaloupe, strawberries, blueberries and mint in medium bowl. Spoon into serving dishes; drizzle with juice mixture.
