Grape-Nuts Pudding
This comforting and toothsome baked pudding was first shared on the box of Post® Grape Nuts cereal many years ago. The pudding is perhaps best described as a happy marriage of bread pudding and flan. The softened grape nuts sink to the bottom of the pudding during baking to form a moist, bread-like base which is topped with a flan-like custard.
Recipe Ingredients:
4 cups milk, warmed
1 cup Post® Grape Nuts cereal
4 large eggs, beaten
1 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon or 1/4 teaspoon ground nutmeg (or both)
Cooking Directions:
- Preheat oven to 350°F (175°C).
- Pour warm milk over cereal in a large mixing bowl. Let stand 5 minutes. Add eggs, sugar, salt, vanilla, and cinnamon and/or nutmeg. Mix well.
- Pour into a buttered 13x9x2-inch baking dish set inside a larger roasting pan filled with about 1-inch of water (called a bain-marie or water bath).
- Bake for about 60 minutes or until knife inserted in center comes out clean.
- Serve warm or cold.
