Rice Lime Fruit Cocktail Cream

No recipe image available.Serve this refreshing rice and fruit cocktail lime gelatin dessert in individual molds or simply spooned into glass stemware.

Recipe Ingredients:

1 (15-ounce) can fruit cocktail (drain; reserve syrup)
1 (3-ounce) package lime gelatin
2 tablespoons lemon juice
1 1/2 cups cooked rice
1 (1.25-ounce) envelope whipped topping mix, prepared (makes 2 cups)

Cooking Directions:

  1. Combine syrup from fruit cocktail with enough water to make 2 cups. Heat to boiling. Pour over gelatin and stir until dissolved. Chill until mixture is partially set.
  2. Stir in fruit cocktail and rice. Fold in prepared whipped topping.
  3. Spoon into individual molds or dessert dishes. Chill until set.

Makes 6 servings.
