Scallion and Habanero Marinated Pork Loin

No recipe image available.Boneless pork chops take a dip in a spicy lime and habanero marinade before being quickly grilled for an amazing flavor.

Recipe Ingredients:

8 (4-ounce; 3/4-inch thick) boneless pork loin medallions
10 scallions (green onions), chopped
2 habanero peppers, seeded and chopped
3/4 cup olive oil
1/4 cup fresh lime juice
3 tablespoons Splenda® Granulated No Calorie Sweetener
1 teaspoon kosher salt

Cooking Directions:

  1. Place pork medallions in large zip-top freezer bag.
  2. Process scallions, habanero peppers, olive oil, lime juice, Splenda® Granulated Sweetener and salt in a blender or food processor 20 seconds or until smooth, stopping to scrape down sides. Pour over pork. Seal and chill 2 hours, turning occasionally.
  3. Remove pork from marinade, discarding marinade.
  4. Grill pork over medium-high heat 2 minutes on each side or to desired degree of doneness.

Makes 8 servings.
