Bow Ties with Smoked Sausage & Peppers

Bowties with Smoked Sausage & PeppersTry this festive combination of bow tie pasta, smoked sausage and colorful bell peppers in seasoned tomato sauce for an easy, great tasting skillet supper.

Recipe Ingredients:

3 tablespoons olive oil - divided use
1 1/2 pounds smoked sausage links, sliced diagonally into 1-inch pieces
1 medium green bell pepper, seeded and cut into strips
1 medium yellow bell pepper, seeded and cut into strips
1 medium red bell pepper, seeded and cut into strips
1 large white onion, sliced
3 garlic cloves, finely minced
1 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1 (14.5-ounce) can diced tomatoes in juice, undrained
Kosher or sea salt and freshly ground pepper to taste
12 ounces bow tie pasta*, cooked according to package directions
Freshly grated Parmesan cheese for accompaniment (optional)

Cooking Directions:

  1. Heat 1 tablespoon oil in heavy large skillet over medium heat. Cook sausage until browned. Drain excess grease.
  2. Add remaining olive oil to skillet and stir in peppers, onion, garlic, basil and oregano with the sausage. Cook until vegetables are almost tender, stirring occasionally, about 5 minutes.
  3. Add tomatoes with juice, season with salt and pepper. Cover and simmer 5 minutes. Add cooked pasta to skillet and toss.
  4. Serve immediately, sprinkling individual servings with freshly grated Parmesan, as desired.

Makes 6 servings.

*Also called farfalle pasta.
