Hoisin-Whiskey Glazed Meatballs
These mini turkey meatballs pack a big wallop of flavor inside and out.
Recipe Ingredients:
8 ounces ground turkey
1/3 cup quick cooking oats
1/3 cup finely chopped green onion (green and white parts)
1 medium jalapeño chile pepper, finely chopped (with or without seeds)
2 large egg whites
1/4 teaspoon coarsely ground black pepper
2 tablespoons light olive oil - divided use
Glaze:
2 tablespoons hoisin sauce
2 tablespoons Bourbon or Canadian whiskey
2 teaspoons brown sugar substitute blend, packed
Cooking Directions:
- In medium bowl, combine turkey, oats, green onion, chili pepper, egg whites, pepper and 1 tablespoon of light olive oil and shape into 24 small meatballs (about 1 tablespoon each).
- Heat 1 tablespoon light olive oil in large, nonstick skillet over medium heat. Cook meatballs 6 minutes or until no longer pink in center, turning frequently. (For better control, use two utensils, such as a fork and a spoon, to turn the meatballs easily.)
- Meanwhile, in small bowl, stir together hoisin sauce, bourbon and sugar substitute.
- Pour hoisin mixture over meatballs in skillet and cook 15 seconds, stirring gently until well coated. Serve with wooden picks.
