Quick Skillet Sausage and Pasta
Fast and tasty, your whole family will enjoy this easy cheesy, sausage and pasta skillet supper.
8 ounces uncooked pasta (ziti, rotini, penne, etc.)
1 pound Italian sausage, crumbled
1 bunch green onions, cut in 1-inch lengths, including green
2 garlic cloves, finely minced
2 tablespoons olive oil
1 (14-ounce) can diced tomatoes with juice
1 (15-ounce) container ricotta cheese
1/4 cup cream or milk
1/2 cup chopped fresh basil
Salt and ground black pepper to taste
Freshly grated Parmesan cheese for accompaniment
- Cook pasta according to package directions.
- Meanwhile, in large skillet, cook crumbled sausage, green onions and garlic in oil until sausage is cooked through. Add tomatoes, ricotta cheese, cream and basil and simmer on low for 5 minutes. Season to taste with salt and pepper.
- Remove from heat, stir in cooked pasta. Serve with a sprinkling of Parmesan.
