Hazelnut Honey Cake

Hazelnut Honey CakeThis fragrant, lemon-scented hazelnut and honey spice cake is drizzled with a honey-sweet wine glaze.

Recipe Ingredients:

3/4 cup honey
1/2 cup butter
1/2 cup dry red wine
2 large eggs
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon grated lemon peel
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 cup finely chopped hazelnuts

Honey Wine Glaze:
1/2 cup honey
2 tablespoons dry wine
1/2 teaspoon ground ginger

Cooking Directions:

  1. Preheat oven to 325°F (160°C). Grease and flour a 13x9x2-inch baking pan; set aside.
  2. Combine honey, butter, wine and eggs; beat thoroughly.
  3. Combine flour, baking soda, lemon peel, spices and salt; mix well.
  4. Add dry ingredients to honey mixture; beat until thoroughly mixed.
  5. Stir in hazelnuts.
  6. Pour into prepared baking pan.
  7. Bake for 35 to 40 minutes or until wooden pick inserted near center comes out clean.
  8. Cool 15 minutes on rack; invert cake onto serving plate or tray.
  9. Brush warm cake with Honey Wine Glaze.
  10. For Honey Wine Glaze: In small saucepan, honey, dry wine and ginger; microwave at HIGH (100%) 30 seconds or until consistency is thin enough to brush over warm cake.
