Sweet and Savory Lamb Bulgur

1 teaspoon olive oil
8 ounces coarsely chopped lamb loin
1/2 teaspoon kosher salt
1/3 cup dried currants
1/4 cup sliced green onions
2 teaspoons minced garlic
3 cups cooked bulgur
1 cup California Ripe Olives, halved
1 tablespoon sherry vinegar
1/4 teaspoon ground cinnamon
Cayenne pepper to taste
1/4 cup toasted slivered almonds
- Heat olive oil in a large high-sided sauté pan over medium-high heat. Add lamb, season with salt and cook for 3 to 4 minutes until browned, stirring occasionally.
- Add currants, green onions and garlic and continue to cook for 1 more minute.
- Stir in bulgur, California Ripe Olives, vinegar and cinnamon. Season to taste with a dash of cayenne pepper and top with
- almonds just before serving.
Makes 4 servings.
