Caesar Salad Tacos
Caesar salad dressing combined with taco sauce turns ordinary tacos into zesty fare bursting with flavor. Cheese, avocado, corn and green chiles form the basis for these tacos.
1 bunch romaine lettuce, torn
2 cups shredded cheddar cheese - divided use
1 avocado, pitted, peeled and diced
1 (4-ounce) can ORTEGA Diced Green Chiles
1/2 cup canned black beans, drained and rinsed
1/4 cup frozen whole kernel corn, thawed
1/3 cup Caesar salad dressing
1/4 cup ORTEGA Thick & Smooth Taco Sauce
1 (12-count) package ORTEGA Taco Shells, warmed
2 cups diced tomato
- Combine lettuce, 1 cup of the cheese, avocado, chiles, beans and corn in a large bowl.
- Combine dressing and taco sauce in a small bowl; mix well. Pour over lettuce mixture; toss well to coat.
- Fill each taco shell with salad mixture; top with remaining cheese and tomatoes.
