This is a great way to enjoy meatless tacos but still garner a good serving of protein. Tofu tacos combine taco seasoning mix with wholesome ingredients for an easy "South of the Border" dining experience.
1 (12.3-ounce) package silken firm tofu
1 (1.25-ounce) package Ortega Taco Seasoning Mix
1 (16-ounce) can ORTEGA Refried Beans
1 (12-count) package ORTEGA Taco Shells, warmed
Suggested Toppings: shredded colby-Jack cheese, sliced green onion, chopped fresh cilantro and ORTEGA Thick & Smooth Taco Sauce
- Place tofu and seasoning mix in food processor; process until smooth. Transfer to a medium, microwave-safe bowl. Fold in beans. Microwave on MEDIUM (50%) power, stirring halfway through, for 2 to 3 minutes.
- Fill taco shells with tofu mixture. Top as desired.
