Zucchini Frittata
An ideal main dish to serve anytime—breakfast, brunch, lunch or dinner.
Recipe Ingredients:
6 large eggs, beaten
1/4 cup milk
2 tablespoons vegetable oil
3 medium zucchini, thinly sliced
1 small onion, chopped
1 medium red bell pepper, seeded and chopped
2 MAGGI Garlic & Onion Flavor Seasoning Cubes, crushed
1/2 cup crumbled Cotija cheese (or Parmesan)
2 tablespoons chopped fresh parsley
Warm corn or flour tortillas
Cooking Directions:
- Mix eggs and milk in medium bowl; set aside.
- Heat oil in large skillet over medium heat. Cook zucchini, onion and bell pepper until onion and zucchini are tender. Sprinkle with crushed seasoning cubes; mix well. Add egg mixture; mix well. Reduce heat to low; cover.
- Cook, without stirring, for 20 minutes or until knife inserted in center comes out clean. Sprinkle with cheese and parsley; serve immediately with warm corn tortillas.
