Maple Syrup Pie
A creamy, pure maple syrup-sweetened custard pudding pie topped with a golden meringue.
Recipe Ingredients:
Crust:
1 (9-inch) baked pastry pie crust*
Filling:
2 tablespoons all-purpose flour
1 tablespoon butter
2 large egg yolks
1 cup pure maple syrup
1/2 cup water
Meringue:
2 large egg whites
2 tablespoons granulated sugar
Cooking Directions:
- For Crust: Prepare and bake pie crust; set aside.
- For Filling: In the top of a double boiler with an electric mixer on medium speed, cream together flour and butter. Add egg yolks and beat well before adding maple syrup and water.
- Place the top of the double boiler over the bottom half and cook the mixture until thick. Pour into baked pie crust.
- For Meringue: Beat egg whites and sugar to stiff peaks and spread the meringue evenly on top. Broil for 3 to 4 minutes, or until glazed.
Makes 8 servings.
*Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
