Maple Syrup Pie

No recipe image available.A creamy, pure maple syrup-sweetened custard pudding pie topped with a golden meringue.

Recipe Ingredients:

Crust:
1 (9-inch) baked pastry pie crust*

Filling:
2 tablespoons all-purpose flour
1 tablespoon butter
2 large egg yolks
1 cup pure maple syrup
1/2 cup water

Meringue:
2 large egg whites
2 tablespoons granulated sugar

Cooking Directions:

  1. For Crust: Prepare and bake pie crust; set aside.
  2. For Filling: In the top of a double boiler with an electric mixer on medium speed, cream together flour and butter. Add egg yolks and beat well before adding maple syrup and water.
  3. Place the top of the double boiler over the bottom half and cook the mixture until thick. Pour into baked pie crust.
  4. For Meringue: Beat egg whites and sugar to stiff peaks and spread the meringue evenly on top. Broil for 3 to 4 minutes, or until glazed.

Makes 8 servings.

*Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
