Pineapple Chess Pie
Old-time chess pie, a single crust custard-style pie, is generally composed of eggs, butter, sugar and flavoring. This version adds a bit of crushed pineapple as the flavoring.
Recipe Ingredients:
2 large eggs
1 cup granulated sugar
1 tablespoon all-purpose flour
1/4 cup light corn syrup
1/3 cup butter, melted
3 ounces pineapple chunks, crushed
1 (9-inch) unbaked pie crust*
Cooking Directions:
- In a bowl using an electric mixer on medium speed, beat eggs; add sugar, flour, light corn syrup, melted butter, and crushed pineapple chunks.
- Pour into unbaked pie crust and bake in a preheated oven at 325°F (160°C) for about 45 minutes, or until the center is set.
Makes 8 servings.
*Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
