Pizza Pescatori

Recipe Ingredients:

6 ounces smoked haddock or cod fillet, skinned and cubed
7 ounces diced tomatoes
1/2 teaspoon dried oregano leaves
2 tablespoons tomato purée
1 (7-inch) refrigerated pizza crust
1/2 green pepper, seeded and sliced
1 small onion, thinly sliced
4 tablespoons shredded cheddar cheese
Freshly ground black pepper, to taste

Cooking Directions:

  1. Preheat the oven to 425°F (220°C).
  2. Place the tomatoes in a small bowl. Season with the oregano and pepper.
  3. Spread tomato purée over the pizza crust. Top with the tomato mixture.
  4. Add the green pepper, onion and cubes of fish. Sprinkle cheese on top.
  5. Place the pizza onto a baking tray, and cook for 15 to 20 minutes until golden brown.
  6. Serve with a green salad and garlic bread.

Makes 2 servings.
